Our Award Winning Pancetta is produced from the belly of our Pedigree Middle White pigs. A perfect combination of succulent meat and fat which produces a wonderful looking and textured Pancetta.
Handmade on the farm our Pancetta is salted for 4 days and then rubbed with a blend of aromatic herbs and spices. The spices Include Chilli Powder, Juniper Berries, Brown Sugar, Bay Leaf, Nutmeg, & Garlic
Then is it cured for a 2nd time after which it is hung to dry. The flavour of the rub then fully penetrates into the pork, producing a lovely balance of texture and flavour.
