Our Pancetta is made from the belly of our Middle White pigs. A great combination of succulent meat and fat which produces a wonderful looking and textured meat.
All produced on the farm our Pancetta is salted for 4 days and then rubbed with a blend of aromatic herbs and spices. The spices Include Chilli Powder, Juniper Berries, Brown Sugar, Bay Leaf, Nutmeg, & Garlic
Then is it hung to dry to let the flavour of the rub penetrate into the pork, producing a lovely balance of texture and flavour.
